Thus, each of them carries its own individual characteristics and distinctive flavour and can be considered as the most immediate and “wildest” expression of the cocoa bean they are made from. Each variety represents a part of the currently existing cocoa plants’ genetic diversity, as they are all obtained from the beans that best retain the characteristics of each tree type, selected and grown to precise standards by the producers in their countries of origin.
