A hybrid caviar of Oscietra and Siberian Sturgeon, Platinum has a more intense flavour than Oscietra alone, often with long nutty notes and a buttery undertone, and a colour ranging from dark grey to ebony.
Platinum has a wonderful robust egg.
This caviar is especially good on smoked haddock.
There is a fashion to pair Amedei white chocolate with caviar. Platinum caviar works very well with this. Spoon a little caviar on top of the white chocolate and let the 2 melt together. Delicious.
