The word Beluga epitomises quite simply the best. Beluga Caviar has the largest egg and is historically the most expensive of all sturgeon. Steely grey in colour, this Beluga caviar has a delicate egg. The taste is legendary subtle with a hint of walnut, the texture being soft and creamy. The King of Caviar deserves to be eaten alone or as simple as possible. We would recommend using a mother of pearl spoon to taste the caviar. A caviar dealer will often taste the caviar on the back of the hand so nothing impairs the taste!! Roll the caviar around the roof of the mouth and savour the creamy, walnut flavour. If you want to eat with something put on a buckwheat blinis. Perhaps with a little creme fraiche. Beluga would also be wonderful served with Crab and Oysters.
