Cold River pure caviar is produced sustainably, whilst using traditional Iranian caviar methods. For this reason the quality of caviar from these Mediterranean sturgeon (the Acipenser naccarii) is fantastic. As with traditional methods, the caviar is matured in the tin for 3 to 6 months, and it is during this time that its flavour develops and evolves, making it fabulously elegant and complex.
