Product Description
The main feature of the salt extraction technique adopted by the Trapani salt works is the spontaneous evaporation of seawater. Since very ancient times, the harvesting of the salt has been naturally linked to the changing seasons, starting in March-April and concluding in October, while the winter months are the resting period for the salt workers. The salt is produced by a means of fractional precipitation selection process. When the brine reaches a state of saturated solution it is put into crystallisation tanks, where the sodium chloride is precipitated, creating thicknesses that may sometimes reach 12-15 centimetres.
