Saffron, whose scientific name is Crocus sativus, has a history of over 3,000 years and has been used by different civilizations on different continents. Characterized by its bitter taste and aroma, it is grown, harvested and handled traditionally - a very laborious and delicate process. Some 250,000 flowers yield a kilo of pure saffron, which has been used as a fragrance, flavour, dye, condiment and drug.
