The Cook family of Severn and Wye Smokery have been involved in the fish industry for over 40 years, offering the highest quality fresh, frozen and smoked fish at competitive prices. This family-run company is situated on the estuaries of the Rivers Severn and Wye, where the Cooks' involvement in the fish industry began by collecting and marketing wild salmon, sea trout, sea bass and eels for distribution locally, nationally and internationally. Severn and Wye deal directly with fishermen so that they can have complete accountability for each catch. The award winning part of the business has the benefit of direct access to this source of fresh fish. The production techniques and smoking processes are still very traditional and the grading, filleting, curing and cutting are still mostly performed by hand. They chip all their own oak wood for smoking, which gives their smoked products a unique distinctive taste.
