The Cook family have been involved in the fish industry for over 40 years, offering the highest quality fresh, frozen and smoked fish at competitive prices. The Company is still family owned and operated. They are situated on the estuaries of the Rivers Severn and Wye, where there involvement in the fish industry began by collecting and marketing wild salmon, sea trout, sea bass and eels for distribution not only locally, but also nationally and internationally.
Severn and Wye deal directly with fishermen so that they can have complete accountability for each catch. The award winning part of the business has the benefit of direct access to this source of fresh fish.
The production techniques and smoking processes are still very traditional and the grading, filleting, curing and cutting are still mostly done by hand. They chip all there own Oak wood for smoking, which gives they smoked products a unique distinctive taste.
