The West Indies Sugar and Trading Company was formed in partnership with the government of Barbados in order to support the survival of the Barbados sugar industry after EU subsidies were reduced in 2006. The company pays substantially more for its raw materials to ensure that producers make a reasonable margin and therefore reinvest in the development of the Barbados sugar industry. All Plantation Reserve sugar is made using specially selected cane that is cut daily, and only at its best during a small time frame during the 6 month harvest season. It is milled for longer to produce larger, lighter crystals with a distinctly natural taste and aroma. The production process lavished on Plantation Reserve sugar takes almost three times longer than that used for normal sugar. The sugar has a buttery caramel taste and a more intense, deep flavour and aroma than any other sugar.
