Bruschetta with cheese, tomatoes and foie gras pate

 

Ingredients

- 6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
- 1 Tbsp extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 6-8 fresh basil leaves, chopped.
- 1 baguette French bread or similar Italian bread
- 1/4 cup olive oil
- Foie Gras Pate
- Mozzarella Cheese

Method

  1. Pre-heat the grill to 170 degrees
  2. Slive the baguette into medium-thick slices depending on your preference
  3. Spread your foie gras pate over the bread. 
  4. Sprinkle the mozzarella cheese over the top of foie gras pate.
  5. Slice the tomatoes in half and place on top of the mozzaerlla cheese.
  6. Finely chop the fresh basil leaves and mix with some olive oil. Sprinkle the leaves on top of the Bruschetta. 
  7. Drizzle the extra virgin olive oil all over the topping and bread.
  8. Then drizzle the balsamic vingear over the dish.
  9. Proceed to grill for 5-8 minutes until the tomatoes are plump, the cheese has melted and the bread has toasted.
