Laura King met Alessio the creator of Amedei at a Dinner party hosted by the famous chocolate guru Sara Jayne Stanes. On trying Amedei, Laura was astounded by its finesse and quality. She began to represent Amedei exclusively in the UK, and has watched it grow into one f the most respected chocolate houses in the Uk, winning many Gold Medals at the Academy of Chocolate awards.
Amedei was created fifteen years ago by Alessio and his Sister Cecilia (who devises the recipes for the chocolate). Amedei is based in Pontedera in the Pisa of Italy. Company ethics ensure that the growers of the beans always receive the best price for their crop, and Amedei carefully manage the whole production process, all the way from bean to bar.
Amedei luxury chocolate was the first to truly harness the exquisite Chuao, (pronounced Choo-ow), which is adored by aficionados worldwide. Many pastry chefs in the world's leading hotels and restaurants use Chuao couverture in their gourmet creations and desserts. How to make an Amedei Chocolate Cake
INGREDIENTS
200g Amedei Toscano
Black 70% dark chocolate
90g Sweet butter
8 Egg yolks
25g Icing sugar
METHOD
* Melt the Toscano Black 70% chocolate in the top of a double boiler with the butter.
* Whip the egg yolks with the icing sugar with a whisk until they are fluffy and fold in the melted Toscano Black 66 and butter.
* Butter a cake pan and line with waxed paper.
* Pour the batter into the pan, which will make a 1.5 cm layer.
* Bake at 160°/170°C for about 10 minutes.
* Cool and turn the cake out onto a plate.
